Egg Free Mayonnaise


5tbspCold Water
2 1⁄2tbspEner-G Egg Replacer
2 1⁄2tspdry mustard
1 1⁄2tspsugar
 eablack pepper or white pepper for taste
1tspEner-G Xanthan Gum
2tspfresh lemon juice
1cupextra light olive oil


In a medium mixing bowl, whisk the Ener-G Egg Replacer and water until foamy, about 1 minute. In a smaller bowl, mix together the mustard, sugar, pepper, Ener-G Xanthan Gum and set aside. Mix in the lemon juice to the Egg Replacer mixture, and whisk for 20 minutes. While still mixing, sprinkle in the dry mix and whisk briskly. Pour mixture into a blender or a food processor to add the oil. You can whisk by hand at a fast pace if you don't have a blender. Start adding the oil slowly while whisking the mixture briskly. Keep adding the oil until all the oil is in the mixture ans whip until a creamy texture is acquired.

Refrigerate any left over mayonnaise.
