Description

Ener-G Egg Replacer gluten-free, soy-free, and vegan Pumpkin Pie.

Ingredients

1⁄4cupEner-G Tapioca Flour
1cupcoconut cream (or any dairy/non-dairy based cream)
1cupcanned pumpkin puree
1cupcanned sweet potato puree
1tspvanilla
1⁄2tspsalt
2tsppumpkin spice
2tbspEner-G Egg Replacer

Instructions

In a large mixing bowl, dissolve Ener-G Tapioca Flour in coconut cream. Add pumpkin, sweet potato, vanilla, salt, spice, and Ener-G Egg Replacer. Blend well and pour into unbaked 9" pie shell. Bake for 45-60 minutes. Allow to cool then place in refrigerator overnight to set before serving.
