Ener-G Brown Rice Flour Corn Muffins
|1⁄2||cup||Ener-G Brown Rice Flour|
|1||cup||gluten-free rice crisp cereal|
|2||tbsp||apple or orange juice concentrate (or 1 cup sugar)|
Preheat oven to 425 degrees F. Mix Ener-G Brown Rice Flour, cereal, corn meal, juice, salt, baking powder and baking soda together. Add remaining ingredients and blend until smooth. Place batter in greased muffin tins until 3/4 full. Bake for 13 to 15 minutes. The batter may seem too liquid, however the rice crisp cereal will absorb any excess liquid.
