Rice Crisp Cereal Sugar-Free & Milk-Free Cake
| 2 | ea | eggs (large) |
| 1⁄2 | cup | apple or pear juice concentrate |
| 1⁄4 | cup | margarine (melted) |
| 2 | tbsp | warm water |
| 1 1⁄4 | cup | gluten-free rice crisp cereal |
| 3⁄4 | cup | Ener-G Brown Rice Flour |
| 3 | tsp | baking powder |
| 1 | tsp | baking soda |
Preheat oven to 350 degrees F. Whip eggs to peaks. Add juice, margarine, warm water and mix for 1 minute at medium-high speed. Set aside. In a medium bowl, combine Ener-G Brown Rice Flour, baking powder, and baking soda. Add liquid mixture and continue blending until smooth. Place batter in greased 8inch baking pan. Bake for 20 to 25 minutes or until firm when touched in middle.
