Description

Rice Crisp Cereal Pumpkin Cake

Ingredients

1⁄4cupmargarine
1⁄4cupsugar
2eaeggs
1⁄2cupmilk
1⁄2cupmashed pumkin filling
1tsppumkin pie spice
1cupgluten-free rice crisp cereal
1cupEner-G White Rice Flour
3tspbaking powder
1tspbaking soda

Instructions

Preheat oven to 325 degrees F. Cream margarine and sugar together. Add eggs and whip in. Mix in milk and pumpkin. Add cereal, Ener-G White Rice Flour, baking powder, and baking soda. Mix for 1 minute at medium-high speed. Pour into greased, shallow 7-1/2inch by 8inch baking pan. Bake approximately 30 minutes or until firm when touched in middle. Let cool before serving.
