Ener-G Small Shells, Pasta Estivi
|2||ea||Large Ripe tomatoes (sliced thin)|
|1||tbsp||lemon juice or white wine vinegar|
|pinch||black pepper (for taste)|
|1⁄2||pkg||Ener-G White Rice Small Shells|
Mix the first 5 ingredients together in a sauce. Refrigerate 1/2 hour. Cook shells according to directions below. Spoon cold sauce over hot pasta. Sprinkle with basil and parsley.
Pasta Cooking Directions: Add 8-ounces (1/2 carton) Ener-G White Rice Small Shells to 2-3/4 quarts of rapidly boiling water to which 1 tbsp salt has been added. Boil uncovered, stirring occasionally for 10 to 15 minutes or until tender, but still firm. Drain and rinse with water.
