Ener-G Potato Mix Poached Chicken
| 4 | lb | chicken (skinned and quartered) |
| 2 | tbsp | Ener-G Potato Mix |
| 1⁄4 | tsp | salt |
| 1⁄4 | tsp | Pepper |
| 1⁄4 | tsp | ground thyme or curry powder |
| 1⁄3 | cup | oil |
| 2 | ea | garlic cloves (minced or 1 minced onions) |
| 10 | ea | Potatoes (small peeled) |
| 2 | cup | chicken stock or water |
| ea | celery and carrot to add with potatoes into skillet (optional) |
Preheat oven to 375 degrees F. Skin and quarter chicken and dry each piece with paper towel. Put Potato Mix, salt, pepper and thyme into a clean paper bag and shake. Put chicken pieces separately into bag and shake until each piece is coated. Heat oil in large skillet and add garlic and chicken. Brown chicken on all sides and then place potatoes around it. Pour chicken stock over chicken pieces. Cover and cook until chicken is tender (40 to 50 minutes). Remove chicken and potatoes to platter. Pour pan liquid over chicken. Serve warm.
