Ener-G Brown Rice Flour Sweet and Sour Chicken

Ingredients

4lbchicken
2tbspgluten free soy sauce
1cupwater
 eaoil for frying
3⁄4cupbrown sugar
1⁄2cupvinegar
1⁄4cupcondensed chicken stock
1pinchsalt
4tbspgluten-free catsup
1tbspgluten-free soy sauce
 eaEner-G Potato Starch Flour
 eagreen pepper (finely chopped optional)
1cupEner-G Brown Rice Flour

Instructions

Skin chicken and cut into pieces. Combine soy sauce, Ener-G Brown Rice Flour and water. Heat oil to 325 degrees F. in an electric wok or deep fryer. Dip chicken pieces into batter. Coat completely. Gently drop into oil and fry for 15 to 20 minutes until dark brown. Remove and drain on paper towel. For Sauce: Combine soy sauce, and Ener-G Potato Starch Flour together and heat to boiling. Let boil 1 to 2 minutes while stirring. Remove from heat and serve over chicken. Garnish with green pepper.
