Ener-G Potato Starch Sour Cream Muffins

Ingredients

1pkgActive Dry Yeast
2tbspwater (warm 105 degrees)
1⁄4cupButter or Maragarine
1⁄4cupsugar
1⁄2tspLemon Juice
1eaegg
1⁄4tspsalt
1⁄2tspvanilla (optional)
1 3⁄4cupEner-G Potato Starch Flour
1⁄2cupsour cream
1⁄4cupRaisins

Instructions

Preheat oven to 350 degrees F. Dissolve yeast in 2 tablespoons warm water (105 degrees F.) Cream butter and sugar together. Add 1/2 teaspoon lemon juice and egg. Mix in sour cream. Add dissolved yeast and mix well. Add remaining 1-cup Potato Starch Flour and mix smooth. Add raisins and mix just to incorporate. Let rise in greased muffin tins (fill 2/3 full) in a warm area to top of tins. Bake for about 15 minutes.
