Peanutty Apricot French Toast

Ingredients

1⁄2cuppeanut butter
1⁄2cupdried apricots chopped
2tbspapricot preserves
1⁄8tspcinnamon
12sliceEner-G Gluten-Free Bread
2eaeggs
1⁄2cupmilk
2tbspmargarine

Instructions

Combine peanut butter, apricots, apricot preserves and cinnamon. Stir to mix well. Spread 6 slices Ener-G gluten-free bread with peanut butter mixture. Top with remaining slices to make sandwiches. Beat egg slightly. Stir in milk. Quickly dip each sandwich in egg mixture. Drain off excess liquid. Melt 1-tablespoon margarine in large skillet. Sauté 3 sandwiches over medium heat. Turn to brown both sides. Repeat for remaining sandwiches. Serve warm.
