Ener-G Egg Replacer

Ingredients

1 1⁄2cupall-purpose flour
2tspEner-G Egg Replacer
2tspbaking powder
1tspsoda
1⁄2tspsalt
1⁄2cupsugar
1⁄2cupoil
4tbspwater
1tbsporange juice concentrate
1tspvanilla
1cupmashed banana
1tspbanana flavor

Instructions

Preheat oven to 350 degrees F. (177 degrees C) Mix Ener-G Egg Replacer and the rest of the dry ingredients together. Add remaining ingredients and mix 1-1/2 minutes. Pour into greased 7-7/8 in (20cm) by 4-1/4 in (10cm) by 2-1/2 in (6cm) pan. Dip rubber spatula into oil and then dip into top of batter and remove quickly (this eliminates cracking on sides during baking) Bake 45 to 50 minutes. Do not let batter sit before using. It is important to get this batter into the oven quickly or this cake will lack volume.
