Ener-G Potato Mix Roast Pork


1 1⁄2tspPaprika
1⁄2tspdried thyme leaves
1eagarlic clove (crushed)
1eapork loin roast (boneless about 3lb)
1eaBay leaf
1eamedium onion (cut into quarters)
1ealarge carrot (peeled halved and quartered)
1 1⁄2cupbeef broth
1eamedium sized (chopped onion)
2tbspbutter or margarine
1tbspEner-G Potato Mix
1tbspDijon Style Mustard
1cupHalf & Half
 ozparsley (optional)


Preheat oven to 350 degrees F. Mix first six ingredients together. Rub this mixture over the entire surface of the pork. Place the pork in a roasting pan. Insert a metal thermometer in the thickest portion of the pork away from the fat. Place the bay leaf on top of the pork. Add the quartered onion and carrot to the pan. Pour the beef broth into the bottom of the roasting pan. Roast the meat until the thermometer reaches 170 degrees F. (about 2 hours) bastes every 30 minutes with pan juices. Saute chopped onions in butter in 10inch diameter skillet or wok over low heat until the onions are soft (about 30 minutes) Mix the Ener-G Potato Mix and mustard into the cream until smooth. Remove the pork from the pan. Discard the bay leaf. Skin the fat from the pan juices. Add onion and cream mixture. Boil. Stir continuously until smooth and thickened. Taste and adjust seasonings if desired. Arrange pork on serving platter. Decorate with parsley. Serve with sauce.
