Corn Bread

Ingredients

1cupcornmeal
1cupEner-G White Rice Flour
1⁄4cupEner-G Potato Starch Flour
1⁄4cupEner-G Tapioca Flour
1tbspEner-G Baking Powder
1tspEner-G Baking Soda Substitute
1 1⁄2tspEner-G Xanthan Gum
1⁄2tspsalt
1cuponions (chopped)
3⁄4cupCheddar Cheese (shredded)
1⁄4cupparmesan cheese (grated)
1cupbroccoli florets
3eaeggs
1tspcider vinegar
2tbspHoney
1eacan cream corn (14oz)

Instructions

Preheat oven to 350 degrees F. In a large bowl, stir together cornmeal, Ener-G White Rice Flour, Potato Starch Flour, Ener-G Tapioca Flour, baking powder, baking soda, Xanthan Gum and salt. Stir in onions, cheddar cheese, parmesan cheese, and broccoli. In a separate bowl, using an electric mixer, beat eggs, vinegar and honey until combined. Stir in corn. Pour mixture over dry ingredients and stir until just combined. Spoon into 9-inch square pans, lightly greased. Bake in preheated oven for 35 to 45 minutes or until a cake tester inserted in the center comes out clean. Serve hot. Makes nine, 3-inch squares.

Tip: Bake in a 2-quart ovenproof glass casserole dish and serve hot, directly from the oven. Reduce baking temperature to 325 degrees F.

Variation: Substitute chopped red bell pepper for half of the onions
