Ener-G Tapioca Flour Ice Cream Cones

Ingredients

1cupgranulated sugar
1⁄3cupmargarine (do not use shortening plus 4 tbsp)
1⁄3cupCold Water (plus 2 tbsp)
1tspvanilla
1⁄4tspEner-G Xanthan Gum
2 1⁄8cupEner-G Tapioca Flour

Instructions

Thoroughly cream sugar and margarine together. Mix in water, vanilla, Ener-G Xanthan Gum, and Ener-G Tapioca Flour and beat at high speed for 10 minutes with whip in tabletop mixer (Kitchen aid, etc.). Pour a layer into a shallow waffle iron or into a Pizzelle Chef. Bake a few minutes and then roll into cones.
Press sides of each cone together and let cool.
