Ingredients

2cupEner-G White Rice Flour
1 1⁄2tbspDry milk Powder
1⁄3cupEner-G Egg Replacer
1tspEner-G Xanthan Gum
2tbspdry yeast
1tspbaking soda
2 1⁄2tbspsugar
2eaeggs
1⁄2cupOrange Juice (Room Temp)
3⁄4cupwarm water
3tbspoil

Instructions

Preheat oven to 350 degrees F. Mix Ener-G White Rice Flour, dry milk, Egg Replacer, Xanthan Gum, yeast, baking soda, and sugar together in a medium bowl. Set aside. In a mixing bowl, whip eggs until frothy. Add in juice, water, and oil. Mix until well blended. Turning mixer on low, add dry ingredients. Blend for 30 seconds. Scrape sides down and mix for another 1-1/2 minutes. Pour batter into 9-inch by 5-inch by 2-1/2-inch lightly sprayed (use gluten-free version) or oiled pan. Smooth out top evenly. Bake for approximately 40 minutes.
