Chocolate Cake
| 1 1⁄4 | cup | Ener-G Rice Mix (Packed) |
| 1⁄3 | cup | Cocoa plus 1 tbs |
| 1⁄2 | tsp | baking soda |
| 3⁄4 | cup | sugar |
| 1 | pinch | salt |
| 1 | pinch | nutmeg |
| 1 | pinch | cinnamon |
| 2 | ea | Large Eggs |
| 1⁄2 | cup | milk (or milk substitute) |
| 6 | tbsp | Vegetable Oil |
| 1⁄4 | tsp | Lemon extract |
| 1 | tsp | vanilla |
Preheat oven to 375 degrees F. Mix Ener-G Rice Mix, cocoa, baking soda, sugar, salt, nutmeg, and cinnamon together. Whip eggs until fluffy. Add milk or milk substitute, egg, oil and flavor to dry mix. Mix 1/2 minute. Scrape down. Mix 1-1/2 minutes. Pour into 8in pan. Turn oven to 350 degrees F. Bake approximately 30 minutes.
