Ener-G Potato Starch Flour Buttermilk Quick Bread
|1 1⁄2||cup||Ener-G Potato Starch Flour|
|1 1⁄2||tsp||baking soda|
|2||tbsp||extra virgin olive oil|
Preheat oven to 375 degrees F. Lightly spray (use gluten-free version) or butter one 9x5x2.5 inch loaf pan. In a mixing bowl, combine the Ener-G Potato Starch Flour, baking soda, baking powder, and sugar. Blend well. Add in the oil, eggs, and buttermilk. Start on a low-medium speed and mix for 5-6 seconds. Scrape down the sides and bottom of bowl as needed. Now, mix on a medium-high speed for 10-12 seconds or until there are no more lumps. Pour into prepared pan, making sure top is even. Place batter into oven and turn down the temperature to 350 degrees. Bake for 30 to 32 minutes, or until middle springs back when lightly touched. Remove from oven and let cool for 2-3 minutes.
