Banana Bread

Ingredients

2eaeggs
1tspvanilla
1cupsugar
1⁄4cupoil
1 1⁄4cupwarm water
2eaBananas (Mashed)
1 1⁄2cupEner-G White Rice Flour
1⁄2cupSoy Flour
1tspEner-G Xanthan Gum
1 1⁄2tspbaking powder
1tspbaking soda
1⁄4tspcinnamon
1⁄4tspnutmeg
1⁄4tspsalt

Instructions

Preheat oven to 325 degrees F. Whip eggs until frothy. Add the vanilla and sugar gradually mixing on low speed until batter thickens. Add oil and water. Mix well. Add bananas. In a separate bowl, add Ener-G White Rice Flour, soy flour, Ener-G Xanthan Gum, baking powder, baking soda, cinnamon, nutmeg, and salt together. Add the dry ingredients to the liquids. Mix for 30 seconds. Scrape sides, continue mixing for 1-1/2 minutes. Pour batter in lightly oiled or sprayed (use gluten-free version) 9 inch by 5-1/4 inch by 2-1/2 inch pan. Bake approximately 1 hour or until done.
