Chocolate Chip Cake
| 1 1⁄4 | cup | Ener-G White Rice Flour |
| 1⁄4 | cup | Ener-G Potato Flour |
| 1 | tsp | salt |
| 1 | cup | sugar |
| 1⁄4 | cup | cocoa powder |
| 1 | tsp | baking soda |
| 5 | tbsp | Olive oil |
| 1 | tbsp | vinegar |
| 1 | tsp | vanilla |
| 1 | cup | Cold Water |
| 1⁄2 | cup | Ener-G Chocolate Chips |
Preheat oven to 350 degrees F. Spray (use gluten-free version) or lightly grease an 8" x 8" pan. Mix Ener-G White Rice Flour, Ener-G Potato Flour, and all other dry ingredients together, except for Chocolate Chips. Mix in liquid ingredients. Mix until blended. Add chocolate chips and blend well. Pour batter into pan and bake for 30 to 35 minutes.
