Scones
| 6 | tbsp | Shortening |
| 1 1⁄2 | cup | Ener-G Corn Mix |
| 2 1⁄4 | tbsp | sugar |
| 1 | tsp | grated Lemon Peel (You can use an orange) |
| 1⁄3 | cup | currants (You can use raisins) |
| 1 | ea | egg (beaten) |
| 1⁄2 | cup | milk |
| 3⁄4 | tbsp | Lemon Juice |
Preheat oven to 450 degrees F. In mixing bowl cut shortening into Corn Mix with two knives. Add sugar, lemon rind and raisins. In separate bowl combine beaten egg, milk and lemon juice. Slowly stir milk, egg and lemon juice into Corn Mix until thoroughly mixed. Turn out on Corn Mix floured board. Divide dough into two equal parts. Pat each into a circle 1/2 inch thick With sharp knife cut each circle into 6 triangles. Place on greased baking sheet. Brush tops with milk or slightly beaten egg whites. Sprinkle with sugar. Bake for 12 to 15 minutes.
