Carrot Cake

Ingredients

4eaeggs
1cupmargarine (Melted)
2cupsugar
1⁄2cupEner-G Potato Starch Flour
1 1⁄2cupEner-G White Rice Flour
1tspbaking soda
2tspPumpkin Pie Spice
1pinchsalt
1cancarrots (16oz drained and mashed)

Instructions

Preheat oven to 350 degrees F. Beat eggs until wet peaks form or mixture is fluffed. Thoroughly mix in margarine. Sift sugar, Ener-G Potato Starch Flour, Ener-G White Rice Flour, baking soda, pumpkin pie spice, and salt together and add to egg mixture. Mix well. Stir in carrots until blended. Bake in greased 9" x 13" x 4" pan for about 30 minutes or until firm when touched on top.
