Gingerbread Cookies

Ingredients

1eaegg (Beaten)
2ozcream cheese
1⁄8cupbutter (or margarine)
4tbspMolasses
1 1⁄2tspvanilla
3⁄4cupDry milk Powder
1⁄2cupEner-G White Rice Flour
1 1⁄2tspground ginger
1 1⁄2tspbaking powder (Omit if making flat cookies for Gingerbread House)
1tbspsugar (add only if making cookies)
2tspEner-G Xanthan Gum
1⁄2tspcinnamon
1tspnutmeg
1⁄4tspAllspice
1tspGround Cloves

Instructions

Cream together egg, cream cheese, butter, molasses, and vanilla. Mix in milk, Ener-G White Rice Flour, ginger, baking powder, sugar, Ener-G Xanthan Gum, cinnamon, nutmeg, allspice, and cloves until well blended (about 1 minute) when the sides of the bowl start to come clean. Preheat oven to 325 degrees. Place dough on cutting board or flat surface. Roll out dough to ¼ inch thickness. Cut dough in desired shapes to be used as gingerbread cookies or for a gingerbread house. Place cutouts on greased cookie sheet about ½ inch apart. Bake at 325 degrees for about 16 minutes. For a gingerbread house let cool for 24 hours.
