Description

Ener-G White Rice Flour Mushroom Verona

Ingredients

2lbfresh spinach chopped and washed
2tbspoil
1lbsliced mushrooms
2tbspEner-G White Rice Flour
3⁄4eamilk
 eapinch of nutmeg
 eapinch of ground basil
1cupEner-G Bread Crumbs
2tbspbutter or margarine

Instructions

Preheat oven to 325 degrees F. Cook spinach in a little water over medium high heat for 3 to 4 minutes in a covered pan. Drain spinach (pressing out as much water as possible). Place spinach in buttered baking dish (which has a lid). Sauté onions and mushroom in 2 tablespoons of oil in skillet or wok. Sauté until tender. Add Ener-G White Rice Flour, nutmeg, basil and stir. Mix in milk and pour mixture over the spinach. Soak Ener-G Bread Crumbs in melted butter and place them over the mixture in the baking dish. Bake for 30 minutes. Serve warm.
