Description

Ener-G White Rice Flour Southern Style Almond Pie

Ingredients

1cupalmond paste
1⁄2cuplight corn syrup
1⁄4cupbutter or margarine
3eaeggs lightly beaten
 ea9 inch unbaked gluten-free pie shell
2tbspblanched whole almonds

Instructions

Combine almond paste, syrup, sugar and butter in saucepan. Bring to boil over high heat. Cook and stir until butter is melted. Remove from heat. If mixture is lumpy, beat with mixer until smooth. Cool slightly. Gradually beat eggs while adding almond paste mixture. Pour into pie shell and top with almonds. Bake to 350 degrees F for 40 to 50 minutes until filling is set. Cool. If desired, serve with whipped cream or ice cream. Makes 1 (9-inch) pie.
