Ener-G Egg Replacer Fresh Apricot Pie

If pie shells are frozen, turn one upside down to thaw for 5- 10 minutes. Then take from pan and place on floured board. Pit all apricots and take about 4-5 of them and mix in bowl until thick mixture forms. In separate bowl, mix sugar, Ener-G Egg Replacer and cinnamon. add to apricot mixture and add vanilla and lemon juice. Mix slightly until blended. Fold in remaining apricots and pour into pie shell. Place other pie shell over top and lightly cut lattice type cuts into the dough, not too deep. Place in 425 degree oven and bake 45-50 minutes. Let cool 35 min.
