Egg-Replacer Gluten-free Pancakes

Ingredients

4tspEner-G Egg Replacer
6tbspOrange Juice
1tbspbrown sugar
1tspvanilla
1⁄8tspnutmeg
1⁄4tspcinnamon
3⁄4cupMilk or soymilk
1⁄4cupEner-G Potato Mix
1⁄2cupEner-G Rice Mix
1tspbaking soda
1⁄2tspbaking powder

Instructions

Whip Ener-G Egg Replacer and orange juice together. Mix in brown sugar, vanilla, nutmeg and cinnamon. Add milk and mix until thickened. In separate bowl, combine Ener-G Potato Mix, Ener-G Rice Mix, baking soda, and baking powder together. Mix into other ingredients. Scrape down. Mix another 30 seconds. Let sit 1/2 minutes. Fry at medium-high heat.
