Ener-G Potato Starch Buttermilk Biscuits

Ingredients

1 1⁄3cupEner-G White Rice Flour
2⁄3cupEner-G Potato Starch Flour
1tspsalt (optional)
1⁄2tspEner-G Xanthan Gum
1tspbaking soda
1⁄2tspBaking Powder
3tbspShortening
1cupButtermilk

Instructions

Preheat oven to 400 degrees F. In a medium bowl, mix Ener-G White Rice Flour, Ener-G Potato Starch Flour, salt, Ener-G Xanthan Gum, baking soda, and baking powder (dry ingredients) together. Cut in the shortening (solid, not melted) and pour in the buttermilk, mix briefly.

For One Large Biscuit: Roll into a firm ball and press down.

For 12 Small Biscuits: Roll into a long cylinder and divide equally into 12 round pieces.

Bake at 400 degrees F. for 15 to 16 minutes.
