Ener-G Potato Starch Clay Pot Country Pot Roast

Ingredients

3lbboneless beef chucks shoulder pot roast
2tbspred wine vinegar
1tbspgluten-free soy sauce
1⁄2tsplemon-pepper seasoning
1eagarlic clover (small and thinly sliced)
1⁄2tspsalt
1⁄4tspfines herbs or herbs de Province
12eawhite onions (small and peeled)
6eacarrots (medium and cut into 1-1/2 in pieces )
6eared potatoes (medium and cut in halved)
1eaparsnip (medium and into 1-1/2 in pieces)
1⁄2cupbeef broth
2tspEner-G Potato Starch Flour
2ozparsley (chopped)
 eaparsley sprigs

Instructions

Combine vinegar, soy sauce, lemon-pepper seasoning and garlic. Place bone less beef chuck shoulder pot roast and marinade in plastic bag. Close bag securely and marinate in refrigerator overnight, turning occasionally. Soak 3 to 4-quart clay pot in water according to manufacturer’s directions. Place pot roast in clay pot; sprinkle with salt and fines herbs. Place onion, carrots, potatoes and parsnips around pot roast. Add beef broth; cover and place in cold oven. Set oven temperature at 425 degree F (hot) and cook 1-1/2 hours or until tender. Remove roast to carving broad. Skim and discard fat from liquid. Place liquid in small saucepan. In a small bowl, combine Ener-G Potato Starch Flour with 1/4 cup water. Add starch mixture to saucepan and cook until thickened, stirring frequently. Carve roast across the grain into thin slices. Arrange beef and vegetables on serving platter; sprinkle wit chopped parsley. Garnish with parsley sprigs. Serve carved roast and vegetables with sauce. Makes 6 servings. To Prepare in Dutch oven: Marinate boneless beef chuck shoulder pot roast as directed above. Place pot roast in Dutch oven; sprinkle with salt and fines herbs. Place onion, carrots, potatoes and parsnips around pot roast; add beef broth. Cover and bake roast and vegetables in 350 degrees F (moderate) oven 2 to 2-1/2 hours or until tender.
