Vegan Pumpkin Pie Filling

Ingredients

2cupCanned Pumpkin
1cupSoy Milk
3⁄4cupbrown sugar (Packed)
1⁄4cupcornstarch
1tbspMolasses
1tspcinnamon
1tspvanilla
1⁄2tspeach Ginger-Nutmeg-Salt
1⁄4tspallspice or cloves

Instructions

Place all ingredients in a blender and puree until smooth. Pour into prepared 9" unbaked pie shell and bake at 350 degrees for about 1 hour. Make the day before serving and let sit overnight to properly set.
