Ener-G Potato Mix Beef Stroganoff

4 | cup | Chopped Yellow Onions |
1⁄2 | tsp | garlic powder |
2 | cup | sliced mushrooms |
3 | tbsp | Ener-G Potato Mix |
1⁄4 | cup | Cream of Sherry |
1⁄2 | cup | beef broth |
1⁄4 | cup | Catsup |
1⁄2 | cup | Sour Cream or Kefir |
Marinate beef and let sit in refrigerator for 24 hours. A good marinade is 1/2 cup oil mixed into 1/2 cup dry red wine. Drain meat. Saute meat in 3 tablespoons oil until browned. Place sauted meat in 4-quart baking dish and reserve the left-over juice. Preheat oven to 350 degrees F. Saute chopped onion, garlic powder and mushrooms in 1 cup of reserved juice and 6 tablespoons oil. Turn off heat and mix Potato Mix into wine, beef broth and catsup. Stir until mixture thickens. Pour sauce over meat and mix together. Cover Stroganoff and bake for about 1 hour or until meat is done. Stir in sour cream. Serve warm with noodles or rice.
