Ener-G Brown Rice Flour Curried Oysters

Ingredients

1ptshucked oysters
2tbspmargarine
3tbspEner-G Brown Rice Flour
1cupChicken Stock
1⁄4tspPaprika
3⁄4tspmild curry powder
1tspLemon Juice
1ealarge green pepper

Instructions

Rinse the oysters. Place in a pan of water and simmer until edges curl. Meanwhile melt the margarine in a large frying pan or wok. Add Ener-G Brown Rice Flour to the margarine and stir over low heat. Slowly add the chicken stock and heat to a simmer stirring constantly until sauced is formed. Add the paprika, curry powder and oysters and stir often while sauce thickens (about 20 minutes). Add the lemon juice and stir. Wash then halve and remove seeds of the green pepper. Place the curried oysters into the green pepper halves and served warm.
