Ener-G White Rice Flour German Chocolate Cake

Ingredients

1pkgGerman Sweet Chocolate (4 oz)
1⁄2cupBoiling Water
6eaeggs (separated)
2cupsugar (divided)
1cupbutter or margarine
1tspvanilla
2cupEner-G White Rice Flour
2tbspcorn starch
2tspbaking powder
1tspbaking soda
1⁄2tspsalt
1cupliquid buttermilk

Instructions

Melt chocolate in boiling water, set aside and cool. In a small mixing bowl beat egg whites until frothy. Add 1/2 cup sugar and beat until stiff but not dry, set aside. Using a large mixing bowl, cream butter with remaining sugar and vanilla until fluffy. Add egg yolks and beat well. Blend in chocolate. Sift Ener-G White Rice Flour with cornstarch, baking powder, baking soda and salt. Add alternately with buttermilk to chocolate mixture, beating after each addition until smooth. Fold in beaten whites. Pour into three 8-inch or 9-inch layer pans lined on bottom with paper. Bake at 350 degrees F., about 30 minutes or until done. Cool. Frost tops only.
