Ener-G Egg Replacer Cookies

Ingredients

2 1⁄4cupwhole wheat flour
1cupbutter or margarine (Softened)
1cuppowdered sugar
1⁄2cupgranulated sugar
1 1⁄2tspEner-G Egg Replacer
2tspvanilla extract
1tspbaking soda
1cupcurrants

Instructions

Combine butter, sugar, Ener-G Egg Replacer and vanilla. Beat until light and fluffy. Combine flour and baking soda. Stir into butter mixture. Mix well. Stir in currants. Shape into a 12-inch roll. Cover. Chill until firm. Slice into 1-inch slices. Place on ungreased cookie sheets. Bake at 350 degrees F. for 10 to 12 minutes. Cool on wire racks.
