Rice Fritter

Ingredients

1pkgActive Dry Yeast (or 1 cake Compressed Yeast)
1 1⁄2cupCooked Rice (cooled)
3eaeggs (beaten)
1 1⁄4cupEner-G White Rice Flour
1⁄2cupsugar
1⁄2tspsalt
1⁄4tspground nutmeg
 eaFat for deep fat frying
 eaconfectioners sugar

Instructions

Dissolve yeast in 2 tablespoons warm water. Mix with cooked rice and let stand in a warm place over night. The following day beat in eggs, Ener-G White Rice Flour, sugar, salt and nutmeg. Add more rice flour if necessary to make a thick batter. Heat fat to 370 degrees F or until a 1-inch cube of bread browns in 60 seconds. Drop batter from a tablespoon into hot fat and fry until golden brown, about 3 minutes. Drain on absorbent paper towels and sprinkle with confectioner's sugar. Serve hot. These are excellent served with maple or fruit syrup.
