Ener-G Egg Replacer Basic Cookie
| 1 1⁄2 | cup | Ener-G Brown Rice Flour |
| 1⁄2 | cup | Ener-G Pure Potato Flour |
| 1 1⁄2 | tsp | Ener-G Egg Replacer |
| 1 | tsp | baking soda |
| 1 | tsp | salt |
| 1 | pinch | cinnamon |
| 1 | cup | sugar |
| 1⁄2 | cup | brown sugar |
| 1 | cup | butter (Softened. You can use Dairy free Margarine) |
| 1 | tsp | vanilla |
| 1 | cup | milk (You can use milk alternative) |
| 12 | oz | package chocolate chip (or any other gluten-free flavor) |
Preheat oven to 350 degrees F. In a medium bowl, combine Ener-G Brown Rice Flour, Ener-G Potato Flour, Ener-G Egg Replacer, baking soda, salt, cinnamon, sugar, brown sugar until well blended. Set aside. In a mixing bowl, cream together the butter, vanilla and milk. With the mixer on low, add the dry ingredients and blend for 10 seconds, scraping down the sides and bottom of the bowl. Stir in a 12 oz. package of chips, of your choice. Drop onto the baking pan by tablespoonfuls, approximately 1 inch apart. Bake at 325 degress F for 9 to 10 minutes.
