Coconut Bars

Ingredients

1cupbrown sugar
1cupEner-G White Rice Flour (sifted)
1⁄4cupbutter or margarine
1eaEgg Beaten
1tspground nutmeg
1cupsour cream
1tspbaking soda
1cupFlaked Coconut
1⁄2cupchopped pecans or other nutmeats

Instructions

Sift sugar with Ener-G White Rice Flour. Cut in butter until crumbly. Stir in egg, nutmeg and sour cream mixed with soda. Mix well. Fold in coconut and pecans. Pour into a well-buttered 9-inch pan. Bake at 350 degrees F. for 45 minutes or until done. Cut into bars. Serve hot or cold.
