Ener-G White Rice Flour Blueberry Muffins

Ingredients

2cupEner-G White Rice Flour
4tspbaking powder
1⁄2cupsugar
1tspsalt
1 1⁄2cupfresh or frozen Blueberries
2eaeggs (beaten)
3tbspButter or Margarine melted
1 1⁄4cupMilk or water
1tspvanilla

Instructions

Preheat oven to 400 degrees F. Melt butter. Sift Ener-G White Rice Flour, baking powder, sugar and salt together. Mix berries with 1/4 of this sifted mixture. To beaten eggs, add melted butter, milk and vanilla. Stir into dry ingredients just enough to combine. Lightly fold in blueberries. Fill well-greased muffin pans 3/4 full. Bake in hot oven for 25 minutes or until top of muffin is lightly browned.
