Ener-G White Rice Flour Coffeecake

Ingredients

1cupEner-G White Rice Flour
1⁄3tspcream of tartar or lemon
1⁄2tspsalt
1⁄4cupgranulated sugar
1tspbaking powder
1⁄4tspEner-G Xanthan Gum
1⁄3cupall purpose vegetable shortening
1eaegg
1tspvanilla
1⁄3cupmilk

Instructions

Preheat oven to 400 degree F. Sift Ener-G White Rice Flour, cream of tartar, salt, sugar, baking powder and Ener-G Xanthan Gum together. Mix well. Cut in shortening until shortening is evenly distributed. Add remaining ingredients and beat for 4 minutes. Pour into greased 9-inch by 9-inch by 2-inch pan or into 12 muffin cups. Bake for 15 minutes. A mixture of sugar and cinnamon, or fruit and nuts may be sprinkled over the top if desired.
