Ener-G Sweet Rice Flour Lemon Cake


1stickMargarine or Butter
1 1⁄2cupsugar
1⁄2tspbaking powder
1 1⁄2cupEner-G Brown Rice Flour
1⁄2cupEner-G Sweet Rice Flour
1tspEner-G Xanthan Gum
2tspLemon extract


Preheat Oven to 350 degrees. Whip together: 1 stick butter or margarine with 2 Tbls. Hot water, & 1 1/2 cups sugar until fluffy. Add 3 eggs, 1 Tbls. Lemon Juice, 1 tsp. Lemon extract, & 1 tsp. Vanilla. Whip until fluffy. In a separate bowl, mix together, 1 1/2 cups Ener-g Rice Mix, 1/2 cup Ener-g Sweet Rice Flour, 2 tsp. Xanthan Gum, 1 tsp. Baking Powder, mix together until well blended. Add to the Egg mixture 1 1/4 cup water, mix slightly. Add the flour mixture and mix 1/2 min. Scrape down sides & bottom. Mix another 1 1/2 min. Pour into 11 x 7 x 1 1/2 in. Greased or sprayed (use gluten-free version) pan. Bake approx. 55÷58 min., or until firm to touch in middle. Let cool, squeeze fresh lemon juice over cake, or ice cake with favorite icing.
