Ener-G Rice Bran Cinnamon Muffins
| 1 | cup | Pure Rice Bran |
| 1 | cup | all-purpose flour |
| 2⁄3 | cup | brown sugar (firmly packed light ) |
| 1 | tbsp | baking powder |
| 1 | tsp | cinnamon |
| 1⁄2 | tsp | salt (optional) |
| 2 | ea | Egg Whites |
| 3⁄4 | cup | skim milk |
| 1⁄3 | cup | Vegetable Oil |
| 1 | cup | Raisins |
In large bowl combine Ener-G Rice Bran, flour, brown sugar, baking powder, cinnamon and if desired salt. Set aside. Beat egg whites in medium bowl, stir in milk and vegetable oil. Add liquid ingredients to Rice Bran mixture. Stir just until moistened. Gently fold in raisins. Spoon batter into greased muffin cups or paper baking cups. Bake at 425 F. for 10 to 12 minutes. Let stand in pan 10 minutes. Transfer to wire rack. Serve warm.
