Jelly Rolls

Ingredients

3eaeggs (separated)
1⁄2cupsugar (divided)
6tbspsifted Ener-G Pure Rice Flour
1⁄8tspsalt
1tspLemon Juice

Instructions

Beat egg whites until frothy. Add 3 tablesp0oons sugar and beat until stiff, but not dry. Sift together Ener-G White Rice Flour, remaining sugar and salt twice. Beat egg yolks until thick and lemon colored. Add lemon juice and flour mixture. Beat only until smooth. Add a small amount of beaten egg whites to yolk. Mixture and stir until blended. Fold in remaining egg whites with a rubber spatula. Set aside. Line a 9-inch by 13-inch pan with waxed paper. Grease. Spread batter in pan. Bake at 375 degrees F. about 13 minutes. Loosen sides. Turn out onto towel sprinkled with confectionerâs sugar. Remove paper. Trim crusts if necessary. Roll cake and towel. Cool. Unroll and spread with jelly or your favorite filling. Roll cake again.
