Ener-G Egg Replacer Lemon Pie


1eabaked and cooled Gluten Free Pie Shell
1 1⁄2cupwater
1 1⁄2cupsugar
1⁄3cupEner-G Potato Starch Flour
3tspEner-G Egg Replacer
3tbspbutter (You can use dairy free Margarine)
4tbspLemon Juice Concentrate
3dropYellow Food Color (Optional)


In a saucepan over medium-high heat, combine water, sugar, Potato Starch Flour, and Ener-G Egg Replacer. Once mixture comes to a boil, add butter while stirring constantly. Start whisking faster and add in the lemon juice and food color. Once liquid has reached desired thickness, pour into pie shell evenly. Let pie sit for at least 5 minutes, then cool it completely by keeping it in the refrigerator for 10 to 15 minutes.
