Rice Crisp Cake
|1⁄2||cg||apple or pear juice concentrate (or 2 cup Sugar)|
|1 1⁄4||cup||gluten-free rice crisp cereal|
|3⁄4||cup||Ener-G Brown Rice Flour|
|ea||Rice Crisp Crunchy Cake Topping (recipe link below)|
Preheat oven to 350 degrees F. Whip eggs until peaks form. Add juice, margarine and milk. Mix briefly. Set aside. In a medium bowl, combine the cereal, Ener-G Brown Rice Flour, baking powder and baking soda. Mix 1 minute at medium-high speed. Place dough in greased 8-inch baking pan. Bake for 20 to 25 minutes. Let cool for 5 minutes. Sprinkle additional rice crisp cereal for a crunchy topping. Use with Crisp Crunchy Cake Topping recipe.
