Rice Crisp Cake

Ingredients

2eaLarge Eggs
1⁄2cgapple or pear juice concentrate (or 2 cup Sugar)
1⁄4cupMelted Margarine
1⁄2cupmilk
1 1⁄4cupgluten-free rice crisp cereal
3⁄4cupEner-G Brown Rice Flour
3tspbaking powder
1tspbaking soda

Instructions

Preheat oven to 350 degrees F. Whip eggs until peaks form. Add juice, margarine and milk. Mix briefly. Set aside. In a medium bowl, combine the cereal, Ener-G Brown Rice Flour, baking powder and baking soda. Mix 1 minute at medium-high speed. Place dough in greased 8-inch baking pan. Bake for 20 to 25 minutes. Let cool for 5 minutes. Sprinkle additional rice crisp cereal for a crunchy topping. Use with Crisp Crunchy Cake Topping recipe.
