Ener-G Potato Flour Chocolate Date Cake

Ingredients

1cupSmall Diced Dates
1 1⁄4cupBoiling Water
1cupsugar
3⁄4cupShortening
2eaeggs
1cupEner-G Brown Rice Flour
1tbspEner-G Pure Potato Flour
2tbspcocoa or Carob
2tspbaking soda

Instructions

Place diced dates in boiling water and let cool. Preheat oven to 350 degrees F. Cream sugar and shortening together until fluffy. Whip in eggs. Mix in dates and water. Mix in Ener-G Brown Rice Flour, Ener-G Potato Flour, cocoa, and baking soda. Scrape down sides of bowl and mix another minute at medium-high speed. Bake in greased 8inch by 8inch by 1-3/4inch pan for 40 minute or until
