Salmon and Olive Casserole


1 1⁄2cupOnion (diced)
2tbspVegetable Oil
1canSalmon (16oz)
1⁄4cupEner-G White Rice Flour
1 1⁄2cupmilk
3 1⁄2ozGreen Olives (sliced )
2 1⁄2cupEner-G Bread Crumbs


Preheat oven to 400 degrees F. saute the diced onion in the oil until tender. Drain the salmon. Reserve liquid. Mix together the Ener-G White Rice Flour, liquid and milk and then add this sauce to the sauteed onions. Stir over low heat forming a smooth thick sauce. Add sliced olives and continue stirring for 4 minutes. Remove from heat. Place the salmon in 6-quart casserole dish and pour the sauce over the salmon. Stir the salmon and sauce together. Saute Ener-G Bread Crumbs in melted margarine until they begin to brown. Scatter the crumbs over the casserole. Bake for 15 minutes. Serve warm.
