Ener-G Potato Starch Flour Apricot Cake

Ingredients

3eaLarge Eggs
1⁄2cupbrown sugar (packed)
2eaLarge Apricots (finely chopped)
1⁄2tspbaking soda
1tspvanilla
1pinchLemon
1⁄4cupVegetable Oil
3⁄4cupEner-G Potato Starch Flour
1⁄2cupEner-G Rice Mix

Instructions

Preheat oven to 375 degrees F. Whip eggs and brown sugar together. Thoroughly mix in chopped apricots. Add in baking soda, vanilla, lemon and vegetable oil. Mix well. Blend in Ener-G Potato Starch Flour and Ener-G Rice Mix. Pour into greased 9-inch diameter cake pans, distributing apricots evenly in batter. Bake for 25 to 30 minutes until done. Let cool before cutting.
