Ener-G Potato Flour Muffins
2 | tbsp | Ener-G Pure Potato Flour |
3⁄4 | cup | Ener-G White Rice Flour |
1 1⁄2 | tbsp | sugar |
2 1⁄2 | tsp | baking powder |
5 | ea | eggs (separated) |
1 | tbsp | oil |
2 1⁄2 | tbsp | water |
Preheat oven to 425 degrees F. Mix Ener-G Potato Flour, Ener-G White Rice Flour and all other dry ingredients together. Separate eggs and whip egg whites to a peak. In separate bowl blend together egg yolks, oil and water. Add dry ingredients and mix well. Fold egg whites into yolk mixture. Batter should be slightly lumpy. Place batter in greased muffin tins filling 3/4 full. Bake for 25 minutes at 425 degrees F. Lower temperature to 375 degrees F. and continue baking for 10 minutes or until golden brown. Tap out onto wire rack to cool.
