Pasta-Bean Soup

Ingredients

1cupEner-G Gluten-Free Rice Shells (cooked)
1eaLarge Chopped Onion
 eaMinced Garlic Clove
1eaGreen Bell Pepper (chopped)
2tbspoil
5cupVegetable Stock or Water
1canTomato Paste (6oz)
1canchick peas drained and rinsed (15oz)
1canKidney Beans Drained and rinsed (15oz)
 easalt and pepper to taste
1⁄2tspSavory
1⁄2tspGround thyme
 eaGrated Parmesan Cheese as Garnish (optional)

Instructions

Cook Ener-G White Rice Small Shells according to directions on package. Saute onion, garlic and green pepper in oil until soft. Add remaining ingredients. Simmer 10 to 15 minutes, stirring frequently. Stir in drained pasta. Serve warm. Directions: Add 8 ounces (1/2 carton) Ener-G Rice Shells to 2-3/4 quarts of rapidly boiling water to which 1-tablespoon salt has been added. Boil, uncovered, stirring occasionally for 10 to 15 minutes or until tender, but still firm. Drain and rinse with warm water.
