Ener-G Tapioca Flour Cake with Honey
| 3 | ea | Egg Whites |
| 1⁄2 | tsp | Cream of Tartar (optional) |
| 1⁄3 | cup | Honey |
| 1 1⁄4 | cup | Shortening (not margarine) |
| 3 | ea | Egg Yolks |
| 2 | tsp | vanilla |
| 3 | cup | Ener-G Tapioca Flour |
| 1 | tsp | baking soda |
| 1 | tsp | baking powder |
Preheat oven to 375 degrees F. Whip egg whites and cream of tartar to dry peaks. Reserve. Cream honey and shortening together. Beat in eggs, vanilla, Ener-G Tapioca Flour, baking soda and baking powder. Place in greased Angel food cake pan and smooth top with spatula. Bake for 35 minutes or until done. Invert pan and tap cake out of pan onto wire rack to cool.
For Chocolate Cake: Add 1 level cup unsweetened Dutch Cocoa.
For Spice Cake: Add 1 teaspoon ground cloves, 1 teaspoon ground cinnamon and 1 teaspoon ground allspice.
