Ener-G Lasagna, Spinach Lasagna


1eaOnion (chopped)
1lbextra lean ground beef
1 1⁄2cuptomato sauce
1tspbasil (crushed)
2 1⁄2tspsalt
 eaPepper to taste
 eaEner-G White Rice Lasagna
2pkgFrozen Chopped Spinach thawed and drained (10oz each)
1 1⁄2cupLow-Fat Cottage Cheese
1eaegg (slightly beaten)
3tbspfreshly grated Parmesan Cheese


Preheat oven to 350 degrees F, Saute onion in oil until soft. Add garlic cloves and ground beef, cooking until browned. Add tomato sauce, basil, 10-1/2 teaspoons salt and pepper. Reduce heat to low and simmer 5 minutes. Set aside. Cook Ener-G White Rice Lasgna according to directions on package. In medium bowl mix together the spinach, cottage cheese, egg, Parmesan Cheese, 1 teaspoon salt, nutmeg and 1/8 teaspoon pepper. Lightly oil shallow 9-inch baking dish Place 1/3 spinach mixture at the bottom. Cover with 2 noodles to make a layer, cutting noodles widthwise if necessary to arrange in dish. Spread with 1/3 of meat mixture. Repeat layering 2 more times, ending with meat sauce. Cover and bake for 45 minutes until bubbly.
Ener-G Lasagna Cooking Instructions: Add 8 ounces (1/2 carton) Ener-G Lasagna to 2-3/4 quarts of rapidly boiling water to which 1 tablespoon salt has been added. Boil uncovered, stirring occasionally for 10 to 15 minutes or until tender, but still firm. Drain and rinse with warm water.
