Ener-G Lasagna, Spinach Lasagna
|1||lb||extra lean ground beef|
|1 1⁄2||cup||tomato sauce|
|ea||Pepper to taste|
|ea||Ener-G White Rice Lasagna|
|2||pkg||Frozen Chopped Spinach thawed and drained (10oz each)|
|1 1⁄2||cup||Low-Fat Cottage Cheese|
|1||ea||egg (slightly beaten)|
|3||tbsp||freshly grated Parmesan Cheese|
Preheat oven to 350 degrees F, Saute onion in oil until soft. Add garlic cloves and ground beef, cooking until browned. Add tomato sauce, basil, 10-1/2 teaspoons salt and pepper. Reduce heat to low and simmer 5 minutes. Set aside. Cook Ener-G White Rice Lasgna according to directions on package. In medium bowl mix together the spinach, cottage cheese, egg, Parmesan Cheese, 1 teaspoon salt, nutmeg and 1/8 teaspoon pepper. Lightly oil shallow 9-inch baking dish Place 1/3 spinach mixture at the bottom. Cover with 2 noodles to make a layer, cutting noodles widthwise if necessary to arrange in dish. Spread with 1/3 of meat mixture. Repeat layering 2 more times, ending with meat sauce. Cover and bake for 45 minutes until bubbly.
Ener-G Lasagna Cooking Instructions: Add 8 ounces (1/2 carton) Ener-G Lasagna to 2-3/4 quarts of rapidly boiling water to which 1 tablespoon salt has been added. Boil uncovered, stirring occasionally for 10 to 15 minutes or until tender, but still firm. Drain and rinse with warm water.
